Einkorn originated in the Fertile Crescent region, which encompasses modern-day Iran, Iraq, and Turkey.

This ancient grain possesses several distinctive attributes. Einkorn has a simple genetic makeup, with each kernel containing only two sets of chromosomes, making it a diploid grain. It has a unique hulled structure, with a tough outer husk protecting the grain. Einkorn once de-hulled reveals a small kernel with a beautiful golden colour.  Einkorn is a Non-GMO grain meaning it has not been genetically modified. Einkorn’s simple genetic structure contributes to its higher protein content. The presence of fewer chromosomes allows for a higher concentration of protein in each kernel. In addition, einkorn’s nutritional profile comprises essential vitamins, minerals, and antioxidants, including B vitamins and iron.

Cooking Instructions

Cooking Time: 30 – 40 minutes
1. Rinse
2. In a medium sized pot, mix one part einkorn with 3 parts water
3. Bring to a boil
4. Once boiling reduce to low for 25 – 30 minutes or until desired texture is reached
5. Strain and rinse with warm water

Cooking time can be reduced if einkorn is pre-soaked for a few hours prior to cooking. Strain and add fresh water before cooking.
